Cortese variety is a classical piedmontese vine: its grapes have a simple taste, but if carefully processed, they can give a good wine with a light fruity bouquet.Grapes are carefully pressed, the must is cleaned by a decantation process. It starts then the fermentation process at controlled temperature (18-20°C) until sugar is exhausted.
This wine is agreeably sparkling and it has a dry taste. It has a fruity bouquet, which reminds banana fragrance, light but long-lasting.
