Our Alta Langa DOCG is 100% Pinot Noir coming from the most vocated vineyards located on calcareous and sandy hills of 250 meters above the sea level.
The pruning system is Guyot.
The grapes are handpicked, and the harvest is made in little basket of 18-20 kg.

Winemaking | : direct soft pressing of the grapes. After the static debourbage (usually made the day after the pressing), the freshly pressed grape juice starts a slow fermentation at in temperature-controlled tanks at 15-16°C. During the spring after the vinification, the wine is bottled with a sweet solution known as the ‘liqueur de tirage’ with yeasts that helps to transform still wine in sparkling wine. This is called “prise de mousse”. The elaboration process lasts more than 30 months from the start of the bottle fermentation. |
