The grapes are handpicked, and the harvest is made in little basket of 18-20 kg.
5 - 10 years
8° - 10°C
: direct soft pressing of the grapes. After the static debourbage (usually made the day after the pressing), the freshly pressed grape juice starts a slow fermentation at in temperature-controlled tanks at 15-16°C.
During the spring after the vinification, the wine is bottled with a sweet solution known as the ‘liqueur de tirage’ with yeasts that helps to transform still wine in sparkling wine. This is called “prise de mousse”. The elaboration process lasts more than 30 months from the start of the bottle fermentation.
This wine is the perfect pairing for an aperitive with a selection of salumi, traditional Italian ham and toast with creamy cheese such as goat cheese (Robiola di Roccaverano). It can be also served all meal long for special occasions and combined with any kind of simple to more complex dishes based on white meat or fishes.
